The bar for fine cuisine is raised through Executive Chef Ryan Shiu's stewardship of the Peony Jade Kitchen team. After impressive stints in China, Macau and his native Hong Kong, Chef Shiu, formerly from one Michelin starred restaurant, The Eight at Grand Lisboa Hotel in Macau, is now Director of Kitchens at Peony-Jade.
Diners can indulge in a wide range of spicy Szechuan delicacies and signature dishes like the Szechuan hot and sour soup, fragrant camphor-and-tea-smoked duck accompanied by steamed Chinese flower buns, Baked Sea Perch Fillet with Shark's Bone Cartilage Comsumme, Szechuan Cripsy Free Range Chicken with Szechuan Hot Sesame Sauce and more.
