Cafe du Soleil - Canterbury

Cafe du Soleil is situated beside the river Stour in Canterbury occupying a former 18 century wool store. The restaurant is accessed by its own bridge over the river. The building was restored 20 years ago with a grant from English Heritage and it now showcases the extensive use of reclaimed building material from the 14C city wall.

The focus of the kitchen at Soleil is the huge wood burning oven. We use locally sourced hardwood from coppiced woodland in Blean Forest to fuel the oven which makes it effectively carbon neutral. Many of our dishes are cooked in the wood burning oven, where the temperature can reach over 500C. Vegetables, fish and meat can be cooked quickly; sealing in all the goodness whilst imparting a unique flavour.

Our cuisine draws influence from Southern France, Italy and Asia and the menu will change with the seasons. The pizzas are hand made using mineral water, 00 Italian flour, fresh yeast, San Marzano tomatoes, extra virgin olive oil, fresh mozzarella, sea salt, cooked at over 400C in our wood burning oven.

We use free range meat from Hedgers butchers of Canterbury, locally caught fish from Griggs of Hythe. Soleil is the sister restaurant to Cafe des Amis Canterbury
