There are at least five distinctive regional and special cooking styles in Thailand. Northern cooking tends to be milder than its counter parts and sometimes sweet as well. Northeastern food is famously spicy and features lots of hot chillies and fresh vegetables. The cuisine of the central provinces is moderately hot and is renowned for its dexterous use of herbs such as lemongrass and coriander and spices such as garlic.
The cuisine of the South is often fiercely hot and is well known for different styles of seafood and spicy fish and seafood soup. And finally, the appex of Thai cuisine stands enthroned the majestic and glorious, the magnificent Royal Thai Cuisine.
